The gently pressed juice was wild fermented in mostly aged oak barrels and a small portion of stainless steel. Blended after 10 months, the wine was bottled unfiltered and unfined with just 12 mg L sulphites. The palate is intense and genuinely ripe, but the acidity still taut and present. The finish is dry, saline and refreshing.
