Akami book including the designs of prolificThe color of this piece of tuna, taken likely from along the spine of the fish, is truly the color I have depicted it as. Marvellous. And the texture. Soft but with bite, if one were basic and uneducated, one might assimilate it to firm jello jelly, but Im far too sophisticated for that comparison. I prefer to compare it to the Otoro liking to taste directly the differences between this giant fish and all its cuts. So far, theyre all wonderful.
