Some freshly mown lawns, butter bean hummus, shortbread, very young Calvados, myrtle tea and fresh fabrics. Also, a smattering of yellow flowers and pollen. Reduction brings out brown sugar on red apple slices, plain dried cereals, cornflakes dusted with icing sugar, snapped green twigs, tarragon and mint cordial with wormwood. To taste, its
